A new dish for breakfast

I like to create new dishes for breakfast. It’s my personal challenge to produce tasty and healthy meals outside the norm. This certainly fits the bill! Although I use honey smoked salmon, but any type salmon will still be delicious. This recipe serves 1 but is easily increased for more.

LIZZIE’S BREAKFAST SPECIAL

    1 Roma tomato, sliced thin
    1 ripe avocado
    2 slices swirl bread, rye & pumpernickel
    ¼ red onion, sliced thin and separated
    ⅓ cup honey smoked salmon
    Balsamic vinegar to taste

Drain tomato on a paper towel while you create breakfast magic.

Cut avocado in half, remove from shell and then dice. Spread on each slice of bread.

Lay onion pieces on top of avocado. Add tomatoes and then salmon. Sprinkle on vinegar.

Dig in!

Yep, at this rate, a long three weeks lay ahead. No one had told Emma that the dozen school teachers ranged in ages from sixty-nine to eighty-eight. Good grief, what happened to women at this age sitting on the front porch and enjoying their rocking chairs?

Mildred waved away the correction “Of course, dear. Whatever you say. I just want to know, will we see any men in kilts soon? I want to see what they wear under them.”

Dirty old woman. She asked that question at least half a dozen times before we got on the bus and stated the reason just as often.

Cook extraordinaire Sloane Taylor who brings us her latest appetizing menu for breakfast from her kitchen. Be sure to get a copy of her cookbook today!

Some people claim breakfast is the most important meal of the day. I believe that’s true, but it doesn’t mean you have to stuff yourself with mountains of borderline healthy food. This menu is satisfying, delicious and won’t cause a coronary. For a more festive morning or brunch add Mimosas. The recipes are gauged for two people so you need to adjust the amounts if you are serving more.

Serve with Fresh Fruit Salad, Croissants or Fresh Rolls, Jam or Jelly, Orange Juice, and Coffee, Tea, or Milk

Scrambled Eggs with Feta and Chives
4 large eggs
2 tbsp. feta cheese, crumbled
Freshly ground pepper to taste
1 tbsp. butter, you may need a little more
2 tbsp. fresh chives or 1 tbsp. dried

Crack eggs into a medium-sized bowl. Scramble well with a fork.

Stir in the feta and pepper.

Add butter to a medium-sized frying pan. Melt over medium heat. Pour in egg mixture and then carefully scramble. Be sure to flip the eggs so the cheese melts.

Sprinkle on the chives. Heat through and then serve.

Fresh Fruit Salad
1 apple, cored and sliced
1 pear, sliced
1 banana, peeled and sliced
Lemon juice
1 kiwi, peeled and sliced
10 seedless red grapes, cut in half
Small handful blueberries
Small handful raspberries

In a glass serving bowl, combine the apple, pear, and banana. Sprinkle with lemon juice to prevent the fruit from turning brown. Gently stir. Add in the remaining fruit.

Cover with plastic wrap then set in the refrigerator to chill until time to serve.

what’s for Sunday breakfast/brunch

Make Sunday morning special with this delicious and easy make-ahead meal. Serve with mini croissants or French bread, butter and jelly. Hash browns and fruit salad are nice accompaniments. Mimosas are a lovely drink to top off your breakfast/brunch.

Breakfast Soufflé
1 pound ham, bacon, or breakfast sausage
9 eggs, lightly beaten
3 cups milk
1 tsp. dry mustard
Diced green, red, and/or yellow pepper to taste
4 – 1 inch slices Vienna or French bread, cubed
½ pound sharp cheddar cheese, grated
½ pound Swiss or Gruyere cheese, or a combination of the two grated
Diced onion to taste
Freshly ground black pepper to taste

Preheat oven to 350°F.

Dice the ham or bacon. If you use ham, set aside in the bowl you choose for the eggs. Fry bacon to the crispness you prefer. If you use breakfast sausage, fry the meat until no longer pink. Be sure to break up any clumps. Drain the meat in a colander while you continue to prepare the soufflé.

Add all ingredients, but the bread, to the eggs. Stir well.

Stir in bread.

Pour mixture into an ungreased 9×13 inch glass dish. Bake for 1 hour or until a knife inserted in the center has no egg cling to it.

This dish can be assembled a one or two days ahead of time. Allow the soufflé to sit on your counter 1 – 2 hours before you bake it.

Leftovers are excellent from the microwave.

Quick & Easy Blueberry Muffins

pizza margheritaWhen writing it is nice to have some quick & easy recipes to make for my family. Because of the fresh, local fruit and yogurt these muffins are healthier than most and go terrific with a cup of hot coffee.

These muffins are naturally sweetened with seasonal, local fruit (blueberries.) A touch of sugar is added to help cream the butter and is also sprinkled on top. You can eat them warm or prepare them the day before for a breakfast treat.

Chris Pavesic’s Quick & Easy Blueberry Muffins

½ cup butter, softened
¼ cup granulated sugar
2 large eggs
1 tsp. vanilla
2 tsp. baking powder
¼ tsp. salt
2 cups all-purpose flour
1 cup vanilla yogurt
2½ cups fresh blueberries
1 tbsp. granulated sugar for topping
extra butter for greasing the muffin pan

Preheat oven to 350° F.

Grease muffin pan with butter.

Mix butter until creamy in a medium-size bowl. Add sugar and beat until pale and fluffy.

Add eggs, beating well.

Stir in vanilla, baking powder, and salt.

With spoon, fold in half of flour then half of yogurt into batter; repeat. Fold in blueberries. There is no need to over-mix it.

Spoon into muffin cups and sprinkle sugar topping onto each muffin.

Bake 15 to 20 minutes, until golden brown and springy to touch.

Spicing up your morning with a breakfast sandwich

This recipe makes two amazing sandwiches.

SPICY BREAKFAST SANDWICHES
2 sausage patties
2 eggs
2 tbsp. butter
2 slider buns
2 tbsp. jalapeno cream cheese
2 tbsp. salsa

Preheat oven to 210° F.

Fry sausage on medium heat. Place pan in oven to keep warm while you continue.

Break eggs in a small bowl. Mix well. Melt butter in a small frying pan. Add eggs and scramble. Cut in half and then fold over. Place pan in oven to keep warm while you continue.

Spread cream cheese across the bottom of each bun. Smear salsa on top of cheese. Layer on sausage and then egg.

Place top bun on your masterpiece and indulge.

Lizzie T. Leaf who brings us her latest idea for breakfast.

I love smoked salmon and enjoy the sides of thinly sliced red onions, sour cream, and capers usually served with them. Then I came up with the idea of having it for breakfast, but turning into a smear. After trying several different smoked salmons the one we enjoyed the most in the smear version was honey smoked.

SALMON SMEAR
1 cup honey smoked salmon, flaked
¼ cup red onion, chopped
½ cup sour cream
2 tbsp. capers
Mini-bagels or slider buns
Honey mustard to taste (store bought is easier)

Mix first four ingredients together in a medium-sized bowl.

Spread a large dollop of Smear on one side of the bread of your choice. Bagels are chewier, but slider buns are softer.

Drizzle mustard over the Smear. Dress it up with green onion tops and then cover with other piece of roll and enjoy.

My family favorites for breakfast from Chris Pavesic . Served with fresh fruit, it can even be considered a somewhat healthy weekend breakfast treat!

COFFEECAKE

2 cups all-purpose flour
½ cup brown sugar, packed
3 tsp. baking powder
1 tsp. salt
½ tsp. cinnamon
½ cup butter or margarine
1 cup milk
1 egg

TOPPING
⅓ cup brown sugar, packed
1 tbsp. butter or margarine, softened
¼ tsp. cinnamon
2 tbsp. All-purpose flour
¼ cup walnuts, chopped fine*
Extra butter/margarine and flour to coat the pan
Powdered sugar, optional

Preheat oven to 350°F.

Butter a 10-inch Bundt pan and then lightly coat it with flour.

Add flour, brown sugar, baking powder, salt, and cinnamon into a large bowl and stir well to blend.

Mix or whisk butter/margarine, milk, and egg into the flour mixture until it forms a batter.

Pour in the batter into the prepared pan.

In a small bowl combine the sugar, walnuts, butter/margarine, and cinnamon. Mix until crumbly. Sprinkle evenly on top of the batter.

Bake 35 – 65 minutes until a sharp knife inserted in the center comes out clean.

Sprinkle lightly with powdered sugar.

Serve warm.

Makes 9-12 servings.

*If you use a food processor to chop the nuts, process them until they are a coarse powder but do not let them form a paste.

Shines On

Breakfast by Sloane Taylor who brings us her Omelet recipe

Omelets are delicious for breakfast with croissants, jam, sausage and perhaps a mimosa on special occasions. Dress them up with French bread, butter, fruit salad, and iced tea for a refreshing lunch. And nothing is better on a hot summer night than an omelet with sautéed broccoli, sliced tomato, and a cool glass of white wine. Give them a try and then tell me which one is your favorite.

A PERFECT OMELET
1½ tbsp. butter
2 tbsp. onion, coarsely chopped
2 large eggs
Freshly ground pepper to taste
Pinch of ground thyme
Small handful extra sharp cheddar cheese, shredded
Small handful aged Swiss cheese, shredded
Chives or parsley, optional

Preheat oven to 220°F.

Use an 8-inch, non-stick skillet, to melt butter over medium heat. Add onion and sauté until translucent. Shuffle the pan often so the onion doesn’t burn

Turn the heat to almost medium-high. Whisk together eggs, pepper, and thyme, then pour into the hot pan. Gently swirl the pan to prevent the eggs from sticking. As they set, carefully lift the edges to allow raw egg to flow onto the hot pan.

Sprinkle the cheeses evenly across the eggs. Flip one side of the omelet over the other to make a half-moon. Slide onto a plate and set in the oven while you prepare more omelets.

The finished omelet will be a nice yellow color with the cheese melted. Sometimes they will have browned a bit. Don’t worry; this does not affect the delicate taste. Sprinkle with the chives or parsley and serve.

An added treat is a handful of chopped ham strewn across the egg mixture right before you sprinkle on the cheese.
