Wednesday Special Spotlight

Shines On

A crunch cookie recipe from Carol Browne that is simple to make.

The measurements for this recipe are not based on imperial or metric. All you need is a tea cup and a teaspoon!

Crunchy Cinnamon Cookies

    2 cups plain flour
    2 tsp. baking soda
    ½ tsp. salt
    ½ tsp. cinnamon
    1 cup sugar
    ½ cup vegetable oil
    1 tsp. vanilla essence (vanilla extract)
    ¼ cup water

Preheat oven to gas mark 4/ 350°F/180C

Pour oil in a bowl and stir in sugar. Add water and vanilla. Mix well. Add this to the dry ingredients. Mix thoroughly and divide the mixture into cookie sheets or the individual sections of a bun tray or muffin pan. The mixture will be runny and will spread to accommodate whatever vehicle you use. The resulting cookies have a very homemade appearance that is quite satisfying!

Bake about five minutes. Rotate the tin and bake for another five minutes. Ovens vary and I found I needed to leave them in longer. What you are aiming for is to take the cookies out when they are still a little soft. They will harden as they cool.

This is a recipe you get better at the more you make it. The number of cookies per batch will also depend on what you cook the mixture in. I usually get about a dozen but I gave the recipe to a friend and she only got nine. I didn’t see what they looked like, however, as she ate the whole lot as soon as they came out of the oven!

You can alter the recipe to suit yourself; perhaps adding chocolate chips. My personal favourite is to use almond essence instead of cinnamon or vanilla.

There is help to be found along the way from a petulant pony and a timid elf boy but, as the strength of their adversary grows, can Elgiva’s friends help her to find the Lorestone before it falls into the wrong hands?

EXCERPT
The night was waning when Elgiva woke, wondering where she was. The dark ceiling of Joskin’s cave hung above her, and everything had a reddish glow, cast by the embers of the fire. She slid from under the fur coverlet, her skin tightening at the loss of its warmth, and searched for her leather sandals.

Something had woken her, something that waited outside the cave. A runnel of dread ran down her spine.

She had an inexplicable sense of impending danger, but it was too insistent to ignore. An unnamed instinct stopped her from alerting her companions. She must face this menace alone.

She left the cave as quietly as she could. Her heart pounded in her throat as she peered between the rowan trees and searched the night. Whatever had awakened her, it beckoned. She held her breath and listened, but her ears detected nothing, save for a silence as dark and empty as an abandoned crypt.

It would soon be daybreak, but the sun had yet to rise, and the dark beyond the cave swarmed with potential horrors. She stepped out from among the rowans, relying on her acute senses to make out her surroundings. An unnatural calm gripped the night and as her sandals whispered against the cold grass, they sounded abnormally loud. She feared they would betray her presence.

After a while, she came to a stop and searched the trees. Thin strands of mist curled along the ground, cold and clammy, like an exhalation of sickness.

She hugged her shoulders, knotted her fingers in the cascade of her hair, and shivered in her ragged robe. All around her, the silence seemed to be drawing into focus.

“Who is it?” Her throat was too dry for her purpose. She swallowed and licked her lips. “Who’s there? I know you’re there. I can . . . I can feel you!”

Feel you.

A flash of silver sliced through the dark, and Elgiva gasped in fear. Her arms came up to shield her face as the beam struck a rock several yards ahead. It exploded with a whoosh and sent up thousands of splinters of light, which fell to the ground and sizzled in the mist.

A shape now stood upon the rock, its form concealed in a black, hooded cloak.

Elgiva clutched the amulet to her breast. Her hands were white with terror. “In the name of Faine, who are you? What sort of trick is this?”

A soft, sly voice spoke back to her. “Why should you fear magic?”

“What do you want?” she pleaded, her voice a croak of fear.

“To see for myself.”

“To see what?”

The dark shape sniggered, but made no answer. Instead, it swept its cloak aside, and a cloud of sparks flew out and covered the ground with beads of light.

Elgiva stepped back unsteadily, resolved to flee.

“Stay!” commanded the creature.

It raised a skeletal hand, and the forefinger swung towards Elgiva and pinned her against the darkness, holding her like a rivet of bone. No elf, no wilthkin, ever owned such a hand. Her legs threatened to buckle beneath her. This had to be a nightmare; she was still asleep in the cave. But no, it was all too real.

“Who are you? What do you want?” she cried. “I have . . . I have an amulet!”

The creature laughed derisively. “I am Death, and I have come for you.”

It began to radiate a sickly green light, enveloping itself in a caul of brilliance that pulsated with force. The light grew in size until the trees behind it were bathed in its angry glare. It reached for Elgiva, like a foul stench creeping along a breeze, and she was helpless. The creature’s power throbbed in the darkness.

Within the taut coils of her fear, her instincts screamed at her to run, but her limbs had turned to stone.

Siriol, Siriol, help me . . . help . . .

With a shriek of glee, the creature increased the throb of its power. Elgiva’s mind was suddenly invaded by an inexplicable force. She became divorced from herself and watched from a great distance, waiting for the horror to unfold.

I have to thank my friend, Jane Easton, the Food & Cookery Manager at Viva! a website full of free delicious vegan recipes, for giving me the recipe for these delicious cookies (or biscuits as we call them across the Pond).

Straight from the oven, these are simply divine! Who would have thought that lavender worked so well in sweet biscuits, but it gives them a lovely fresh flavour.

LAVENDER BISCUITS

4 oz. vegan margarine or vegetable fat
Drop of vanilla essence or ½ fresh vanilla pod, scraped out
3 oz. castor sugar
5 oz. plain flour
Small amount of plant-based milk OR small amount of orange juice and zest of ¼ orange
5 lavender flower heads (in bloom), finely chopped or 1 tbsp. rosemary, finely chopped

Preheat oven to 180°C (350°F).

Beat margarine, vanilla, and sugar until pale before adding the flour.

Gradually add a small amount of the plant-based milk OR orange zest and orange juice, a little at a time, until you form a stiff dough.

Stir in lavender until evenly distributed.

Roll into balls the size of a walnut. Place on baking sheet.

Bake 10 minutes or until the biscuits are golden brown.

Allow to cool a little before lifting off the baking tray.

Dominique Eastwick in the kitchen whipping up a batch of mouthwatering cookies. Take it away, Dom!

ITALIAN ANISETTE COOKIES

COOKIE DOUGH
4 cups all-purpose flour
1 tbsp. baking powder
1 cup granulated white sugar
¾ cup vegetable oil
½ cup milk
1 tbsp. anise extract
2 eggs

ICING
1 cup confectioner’s sugar
2 tbsp. hot water
1 tsp. anise extract
sprinkles, optional

Preheat oven to 375°F.

Combine flour, baking powder, and sugar in a large bowl. Make a well in the center and add oil, milk, extract, and eggs. Mix together until dough is sticky.

Oil fingers and pinch off dough in 1-inch pieces. Roll into a ball and place on a lightly greased cookie sheet, 1 inch apart, flatten top slightly.

Bake 8 minutes.

Blend anise extract and enough hot water to confectioner’s sugar to form a smooth icing. Drizzle or spread across the cooled cookie tops. Add sprinkles for a festive touch.

Brew yourself a nice cup of tea to go with your delicious fresh cookies and then snuggle up with a good book.

Gingerbread cookies

Many people tend to think about gingerbread around the winter holidays with good reason. The tradition of decorating a gingerbread house began in Germany during the 16th century and was associated with Christmas. Queen Elizabeth I is credited for the idea of making ornaments out of gingerbread men, gilding the dough with gold leaf and decorating them to resemble the dignitaries visiting her court. Yet during this era gingerbread was also served in the spring and summer with shapes that changed with the seasons. Spring cookies were shaped into flowers while summer cookies featured birds.

Why is this type of dessert so popular? The fact that ginger has a history of relieving digestive problems, such as nausea and indigestion, may be a factor, especially since it’s served on traditional “feast days” after a large meal. So these cookies could be a nice addition to your next backyard barbeque or picnic when your guests have overindulged.

These cookies go great with coffee or French vanilla ice cream!

Spring Fling Gingerbread Cookies

2 cups all-purpose flour, plus more for rolling
2 tsp. ground ginger
1 tsp. ground cinnamon
¼ tsp. ground cloves
¼ tsp. baking soda
¼ tsp. salt
½ cup (1 Stick) unsalted butter, softened to room temperature
⅓ cup brown sugar, packed
⅓ cup unsulfured molasses
1 large egg
decorating sugar or sprinkles

In a medium-sized bowl, sift the dry ingredients together into a medium-sized bowl.

Use an electric mixer to beat butter and brown sugar in a large bowl until smooth. Beat in molasses and egg. Set the mixer on low, and then add dry ingredients slowly. Mix until dough is formed.

Place dough on floured plastic wrap. Wrap well and chill in the refrigerator until firm. (Between 1-2 hours)

Preheat oven to 350° F.

Divide dough in half. Working with one half at a time (rewrap and refrigerate other half), place dough on floured parchment or waxed paper. Roll it out to ⅛ inch thick, turning, lifting, and flouring dough (and rolling pin) as needed. Freeze dough (on paper) until firm, about 20 minutes.

Repeat this process with the second half of the dough.

Loosen dough from paper. Cut out shapes and transfer to baking sheets. Decorate as desired.

Bake until firm and edges just begin to darken, 10 to 18 minutes, depending on the size of the cookie. Cool completely on baking sheets.

I am currently working on two projects. I have a two book epic fantasy in the draft/beta reading stage and I am working on a LitRPG novel concept. For those who might not be familiar with the genre, LitRPG is a subgenre of science fiction and fantasy which describes the hero’s adventures within an online computer game. Finally my love of gaming and writing are coming together! I knew all of those nights I stayed up playing MMORPGs would pay off someday. Right now my LitRPG is in the hands of my editor.

It all boils down to more time in front of the computer and putting words on the screen. Over the next few months I will make more announcements as events warrant. Until then my short stories are available on Amazon.com and are free if you have Kindle Unlimited.

Twisted Chocolate Chip Cookies

When Ruth Graves Wakefield invented chocolate chip cookies in 1938 – hence forth named Toll House Cookies for the inn she owned in Whitman, Massachusetts – the confection became an instant American classic. So, perhaps, no one should be messing with these gooey, nutty hunks of near perfection. Ah, but I couldn’t help myself. As I’ve gotten older my taste buds seem to dance less at the prospect of excessive sweetness and more for. . . something else. I began tinkering with Ruth’s invention – I hope she doesn’t mind – and came up with these jam-packed babies that I call. . .

Twisted Chocolate Chip Cookies

2¼ cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
¾ cup granulated sugar
¾ cup packed brown sugar
1 tsp. vanilla extract
2 cups dark chocolate chips*
1 cup nuts

Frequent chocolate chip cookie bakers will note that here is where the recipe goes off the rails.

1 cup dried cranberries
1 cup dried blueberries
1 cup coconut, I prefer the type without added sugar, but either variety works.

Preheat oven to 375ºF

Mix sugars, butter, vanilla, and egg in large bowl. Stir in flour, baking soda, and salt (dough will be stiff).

Stir in chocolate, dried fruit, coconut, and nuts.

Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.

Bake 8 to 10 minutes or until light brown round the edges (centers will be soft).

*Note: Chocolate chips retain their shape because they contain less cocoa butter than high-end chocolate, so purists may want to chop their own chocolate to get more of the good stuff.

This is a new family favorite. I made these in place of my traditional Christmas Cookies last year, and have requests to make them for all upcoming holidays. For New Years I made an extra batch to store in the freezer for any time an unexpected guest visits, and they lasted about a day.

Chocolate Chip Chocolate Cookies
½ cup unsweetened baker’s chocolate powder
¾ cup granulated sugar
¾ cup packed brown sugar
1 cup butter (plus an additional amount for coating the baking tray)
1 tbsp. vanilla
1 egg
2 ¼ cup all purpose flour (plus an additional amount for coating the baking tray)
1 tsp. baking soda
½ tsp. sea salt
1 package (12 ounces) semi-sweet chocolate chips
¼ package raw pecan halves
½ cup (approximate) coarse sugar or sanding sugar

Preheat oven to 375° F.

Prepare the baking sheet by coating the surface with butter and then dusting with flour. This will help ensure the cookies do not stick.

Prepare the plate. Sprinkle the coarse or sanding sugar on the surface for pressing the cookie dough.

Mix chocolate powder, granulated sugar, brown sugar, butter, vanilla, and egg in a large bowl until blended.

Stir in flour, baking soda, and salt until mixed. (The dough will be stiff.)

Stir in chocolate chips until evenly mixed.

Using the tablespoon-sized measuring spoon, scoop one cookie and drop it onto the plate.

Using your fingers or the back of the spoon, press and mold the dough until it is shaped the way you desire. (My family likes the traditional rounded cookie shape—but you do you!)

Lift the cookie and place it sugar-side up on the baking sheet. Press one of the pecan halves into the center. Repeat for the remaining cookies.

Space the cookies about 2 inches apart on the baking sheet. Bake for 8 to 10 minutes. Cool slightly. Remove from the cookie sheet. Finish cooling on a wire rack.

This recipe makes about 36 cookies.

I am currently working on two projects. I have a two book epic fantasy in the draft/beta reading stage and I am working on a LitRPG novel concept. For those who might not be familiar with the genre, LitRPG is a subgenre of science fiction and fantasy which describes the hero’s adventures within an online computer game. Finally my love of gaming and writing are coming together! I knew all of those nights I stayed up playing MMORPGs would pay off someday. Right now I am in the world-building stage for my LitRPG.
